it works the same way as setting chapters. the subscribe button will light up at a certain time in the video, it could be at the end, when you say subscribe, or at the very start. it's not dependent on someone actually saying "SUBSCRIBE PLZ".

I'm sure youtube can do that over a video automatically and it wouldn't need to listen to the mic since it has the audio already, and it wouldn't need to be live, it could be pre-processed after upload and timestamped for the sub button

It's been auto-transcribing videos for years. They probably just wrote a tiny bit of Javascript that triggers when the word "subscribe" appears in the transcript.
