Well, there's the difference. When people use a DE like GNOME, they expect it to provide a complete environment with all the basic features accounted for. Alternatively, if you want something very minimalist, you use a standalone WM and add in just the features you need.
The problem is, with GNOME, you get the absolute worst of both worlds. You get a DE that lacks a lot of the things people expect out of a DE, but is more bloated and less configurable than a standalone WM. Not to mention, GNOME just does stupid shit in general, like when they royally fucked up the font rendering in GTK4 and insisted the users were wrong for thinking it looked like shit.
Never understood why some people think it's ok to take away things from the bare minimum. There's a set of agreed-upon features in a DE that *make sense* to be there, yet some fucker comes along and thinks "nah, I never use this... better remove it for everyone".
Yes, questioning things from time to time is a good thing, but just blindly removing features that basically everyone is actively using is pretty much user-hostile.
Ebussy has a vision - it just doesn't include anyone who wants GNOME2-but-modern.
Use Cinnamon instead. Abandon the shitshow that is GNOME.
