You could be a bounty hunter/mercenary. The force and a lightsaber plus a blaster of some sort can be useful for that sort of thing.

It's mostly just an issue of writers making shitty Gray Jedi in media. I think the only one that I read about that I kinda liked was Ulic Qel-Droma, who turned towards being a Sith, killed his brother during that point and only repented after his new master lost the war and he went into exile. But he got shot in the stomach by some fat dwarf and died pretty unceremoniously right after meeting up with his ex when he'd spent, like, six months training her daughter to use the Force.
There's a lot of good ideas for gray jedi in legends, but they're usually not expanded out. The Potentium has a lot of good space for gray jedi - where no part of the force is inherently good or bad, it's your motives and actions that determine it. Or hell, the much vaunted Darth Vevictus was closer to a gray jedi than an actual sith. The issue is that the two kinds we tend to see are "Jedi who's too cool for rules, a loose canon who gets results!" and "ZOMG 2 powerful 4 sides, I trounce everyone 4ever."

Not really. Jedi and sith are descriptive and are the gestalt of different galactic practices. You cant just have your cake and eat it too. They are the results of inner more intimate truths. At some point, for universal love, you are going to get towards jedi detachment from physicality, as an excess of possession leeds to greed and worldliness. See things like chritian monks, buhdist monks, Sufis and the like. While if you go towards egoism you will inevitably become sithish, and sith is the gestalt of that path. Will to power and all that.
