Isn´t the overall speed record held by a jet-engined car, Thrust SSC. Also there is like zillion different classes in Bonneville style speed running.
I think the reason for the V8 thing. USA is THE nation when comes to drag racing. Americans have put V8s in everything since the dawn of time. So it´s mostly tradition and the reseach has been on V8s. If V12s would have become the dominant engine, top fuels would run V12s.

The OHV engines they use in top fuel are simple, proven tech that's easy to balance and rebuild in a short amount of time is all it amounts to.
As for other types, its more a commonality issue seeing as how from the late 40's to 80's your average domestic truck/sedan/sports car all had the same type of engine, and were easily swappable, where other forms like V6 I6 or I4 were uncommon.
Nobody asked OHC vs OHV but top fuel Black folk use it simply because its simple. Dohc would be better but its banned. Corvette dumped shitrods they are boutique truck motors.

Coyote, Modular, and LS, etc engines have such a deeply ingrained history in US car culture that swaps and support are basically everywhere for every vehicle. They're also super inexpensive crate engines.
I'm sure we'll see more ecoboost 3.5s and shit start getting swapped, as well as 2.7s from GM and Ford, since they're super light and offer good potential for smaller cars.

No other engine is going to handle that sort of power. There are no engine restrictions at Bonneville yet the record is held by a big block V8.
