Why is the term science now used as if it is some sort of objective infalliable holy truth when in fact it is simply a method to discover the truth that is not always reliable or even accurate and by no means has a complete map of reality? Why can't people understand its just a method to try and understand the truth not the truth itself?

Because it is the closest approximation of truth, it might as well be considered truth, especially when the alternatives are pure conjecture and "revelation"

But this isn't really true when so much "science" can simply have the outcome the entity funding the study wants. Science has become entirely politicized and is now used as a new holy law to shut up critics and dissenters from the status quo. This isn't to say all practised science is bunk but I certainly seems to b heading in that direction. One only needs to take a look at the denial of race or sex, or the insistence that COVID vaccines were 100% safe when in fact they were rushed and had many side effects or that the black lives matter protests wouldn't increase transmission of COVID. This is also sanctioned by the current medical and scientific community when it is obviously pseudo-scientific.

It does see to be heading in that direction by the increasing amount of pseudo-scientific believes in the scientific establishment. I never said that all "science will soon bunk". You should practice what you preach and stop arguing in bad faith yourself.

The "soon" part is absolutely the only wiggle room you have.
You said that "practiced science is heading in the direction of being entirely bunk", and I merely assumed you meant sometime in your life.

            How is that bad faith?

            See

If there was an increasing amount of authoritarian policies introduced and one were to say "its heading in the direction of totalitarianism" that does not mean they think totalitarianism is inevitably around the corner, it simply means it's getting closer to such a state.

Nah, truth is truth. It does not need deception and censorship to sustain itself. “ The Science “ is the name of the secular beast they worship.

That would be more logically consistent than continuing to follow “ the science “. You’d think the last three years of constant lies, shifting of the goalposts, and now more recently the revelation of the magnitude of the lies would break your faith in your false deity.

the problem isn't with the philosophy of science, but with modern prominent scientific figures being either willfully partisan or completely illiterate to human psychology.

It's a larger scale version of the professor who lets the smart student in class stroke his ego and make him think he is a great lecturer.

And what is the great alternative to basing our policies during a pandemic on the cutting edge of science? Yes,sometimes a new study will be flawed and get things wrong, but the alternative is guess work. At least the scientists are trying to use reliable and proven methods to predict things and find treatments.
Personally I think a lot of the skepticism comes from being told things you don't like, such as having to wear a mask everywhere. That and a general misunderstanding by the public of how this stuff works.

When a modern state needs to make something non-ideological it does so by reference to science, as it cannot justify its actions by another framework. This obviosuly has the glaring problem that science itself requires an epistemological framework to function. However, in the particular case you posted the reps are just shitting their pants that reality doesn't agree with them. Fauci is right to say that.
