      I wasn’t impressed with French cuisine to be quite honest with you. I thought it was overwrought, overcomplicated, and too fixated on presentation. I loved visiting France for many reasons but was disappointed by the food scene and thought Italy was indisputably superior place when it came to food

    3: aristocrats could afford good food but the plebs were eating industrially preserved cheap food and when they started to gain wealth in the postwar era they continued on

    They can be compared to African Americans who had a substantial proportion of rural tobacco farmers and cotton pickers until the 1950s. At which point they were thrust into America's consumer economy and could afford dried spices imported from across the world, cooking oil and so on. They like fried food. Even so in the ghetto they picked up some bad habits like using dish soap to wash chicken. Maybe they like it lemon fresh, I don't know.

      I dunno about soap, but washing meat tends to originate in hot climates pre-refrigeration. If you have fresh raw meat sitting out the outside is going to start smelling bad and develop a slimy texture. Meat was washed to get rid of this smell and slime.

    As a Finn, I’d think that it’s a combo of 3 factors: first, the shitty environment in regards of growing food and especially spices, which made it necessary to hyperfocus on nutritional values and preservation of the food. Secondly, those realities left an imprint on the collective consciousness of people that made them think about food in almost purely utilitarian sense even after it wasn’t necessary. Third, as a historically poor country, for most of history there just wasn’t really a big enough upper class that could have given a proper base for any kind of proper culinary culture.

    I mean, I come from a pretty rural town in northern Finland, and when I look at the people in the generation of my parents (born in 50’s), most of them completely lack any enthusiasm about food and have incredibly narrow tastes - anything new or different is usually rejected without even giving it a proper chance. Food is just something you take to stay alive, not something to really care about. And obviously, older generations are even worse, while younger generations are unsurprisingly a lot more open-minded. Basically, the historical reasons don’t exist anymore, but it takes time to get rid of the marks they left on the society generations ago.

      Italian food is such a fricking meme. Its mostly peasant food and fast food essentially. It can be good for sure but its certainly not mind blowing compared to other country's cuisines.

      As for northern Europe, I'd say a lot of things like say, haggis, seem icky to a lot of people because they're a bit off kilter with modern western Americanised cuisine, which is increasingly being influenced by fast food derived from Asia and Latin America. But really a decent haggis is fricking tasty.

    Farthest away from locations with tasty plants.
    Food was scarce and growing periods short, so preservation techniques trumped flavor most of the time.
    Cuisine developed from that.

    Tasty food is one of the few things people from Northern/Western Europe like about other populations so that is what is used to promote immigration.
    People from other locations have few, if any, actual accomplishments, so their ancestors having lived near the native locations of tasty plants are used to promote a sense of superiority among those groups. Demeaning NW European food is their way of "evening" the achievement gap.
