Because they couldn't, they were too dumb. Spain conquered Incas and aztecs before ottomans even realized that earth was a sphere.

It's a bit hard to when you don't have any atlantic ports and your rival controls the only exit to the mediterranean
Besides they already had direct trade and control with the wealth of the east and it was much easier for them to focus their efforts there

They were well aware of the shape of the earth, The only people who didn't know about it by that time were the chinese and other east asians.

          >Quoran says earth is flat.
Not everyone in the middle east was so dumb as to automatically believe whatever the Quran said, muslim scholars were as well aware of greek works about the earth being round as europeans were

The Chinese knew it was round too, just like they know your stupid ugly American eyes are round.

Wrong, the chinese only learnt of it from the jesuits in the 17th century, they then went about pretending they had discovered it first and tried to pretend that everything the europeans knew was dervied from the chinese
          >Beyond the narrow circle of technicians of astronomy, European astronomy was so much judged worth consideration that numerous authors developed the idea that the Chinese of antiquity had anticipated most of the novelties presented by the missionaries as European discoveries, 10 for example, the rotundity of the earth and the “heavenly spherical star carrier model.” 11 Making skillful use of philology, these authors cleverly reinterpreted the greatest technical and literary works of Chinese antiquity. From this sprang a new science wholly dedicated to the demonstration of the Chinese origin of astronomy and more generally of all European science and technology. 12

    >harem of indigenous women
Monogamy didn't stop Spaniards and the Portuguese from achieving this. Hell, in some cases they were forced by their captain to do so. You see, many native groups only knew how to do alliance through marriage. I remember a case of a man nicknamed the "Adam of the new world", he took over a thousand Amerindians as wives.

There were bigger problems right on their northern doorstep but which they never bothered to address because of the Sultanate of Women regime that existed between the late 1500s and early 1700s.
As a result in the mid 1700s, everything started to crumble and the Ottoman Empire was a deadman walking.
