The villains in general. This show is all in all a massive upgrade from the original and the villains are pretty excellent here. They had basically no presence before.

Grizzlor was also in but he was stricly a background Horde member who barely did anything and never had his name mentioned outside credits. He wasn't in many episodes either.

The concept of Horde Prime and his Hordaks was actually a solid idea to an out-of-place character. It allows Prime’s existence to not automatically undermine Hordak but instead give him an arc.

The Dreamworks writings had an abundance of ideas to choose to use when they watched the Filmation show. The issue was that they didn't add up to anything explicable, as different writers were writing 65 episodes faster than they could coordinate with each other.
Prince Zed's episode had production code 11, making the first time Horde Prime was so much as mentioned when we met his elf son.
The earliest appearance of the giant robot arm and mist by production code was "Horde Prime Takes a Holiday", but that's obviously wildly out of place, as it's a Joe Straczynski ep with Modulok's creation Multi-Bot but comes before him introducing Modulok to She-Ra ("Gateway to Trouble")! So that character model was probably made for #27 "The Eldritch Mist" and both Joe and Prince Zed's creator Francis Moss were writing with no idea what Prime looked like.
Weird new revelations even continued into the second season: there was some confusion about who raised Adora until "The Caregiver" explicitly said that Hordak raised her and hired a nanny named Shakra who was "the closest thing I had to a mother until my brother Adam found me." And this mother figure we'd never heard of before hits retirement age and thinks that, while Hordak isn't a nice man, she can collect her pension at the main Great Rebellion camp.
Everything is racist. Noelle got financially abused by the race grift industry for saying one of Bow's siblings is a farmer, for fuck's sake.
Also, academic leftists coined Death of the Author, so we're just hoisting them on their own petard.
My personal opinion, it's the characters. Noelle may be a crazy dyke, but she knows how to write interesting characters. Catra is actually kind of a compelling villain, Adora is a bit bland, but she's endearing and a joy to watch, watching Glimmer basically nuke the planet out of desperation was great, etc. Characters like Shadow Weaver and Entrapta were the stars of every scene they were in.
