            in my experience ghee doesn't exactly work, it doesn't form a thick emulsion
            if you start an emulsion with MCT, then add the ghee to that emulsion and whip, I believe it does work. i just use MCT to keep it simple, especially since I don't need to use mayo all the time

    I use animal fat for damned near everything. Lard, beef tallow, gee, whatever.
    for other applications (like mayo) where those aren't practical it's olive or avacado oil. sometimes coconut.
    Though now that I think of it, I'm wondering if a gee based mayonaise might work.

I made my own with an emulsifier and olive oil once, even in whole foods I've only seen seed oil mayo in stores, even the ones that advertise being made with olive oil have that further down the ingredient list with seed oil as the top ingredient
