That's enough of a reason to go with something of such a small form factor. If you plan on running high performance tasks within those specifications, you should consider using something a bit larger, or with better heat dissipation, as those tiny boxes aren't exactly ideal in that aspect.
If your use case doesn't require much, it's a solid option, a full tower isn't the only option available.
They can be a replacement for laptops, IF the laptop in question is docked with a mouse/keyboard/monitor, and is never taken out of the dock. Like secretary workstations, meeting rooms, monitoring setups and such.
But that's the entire setup, not JUST the laptop.

Pi is a useless toy that can barely run 4K accelerated video.
If the GPU support is as atrocious as the Pi 4 after... 4 years then you still won't have HW encode which defeats the purpose of running Plex/Jellyfin. You'll be lucky get HW decode, even.
why? those minipc are way better than Pis, for basically same price if you go for lower-end celeron models.

Depends on your needs. I just finished setting up one as a home server/HTPC. Automatically downloads my anime, and provides network access through jellyfin. Has kodi running and hooked up to a TV. Has hath running for charitable purposes, and lets me proxy into it for VPN services on my phone while I work, or to remotely fix something for any other computer on the network.
All for a TDP of under 25 watts. Much lower than the 2012 laptop it replaced

I've been running the same Haswell i5 for 10 years, I've been intending to change but nothing really demands it. Now a lowly N100/N200, basically a modern Atom, the shittiest of tiers, is on par with my crap i5. My next PC is gonna be a mini one, of that I'm sure.
Two things leave me doubts. I use a lot of HDDs so need a good number of USB ports, this doesn't seem to be much of a problem though. The other is parts. I'd like removable ram, dual nvme, standard fans that can be gotten in a shop in a jiffy. The chingchong mini PCs like OP seem to use some kind of notebook shit cooler. But I've seen others, ones that come in a black case that looks like a heat spreader (kinda ugly but who cares), that take regular 80/92mm fans (albeit thin ones it seems) with everything except the CPU being serviceable. Those sure look better.

My biggest concern with this setup is power. How is the GPU powered? Via the tiny SFF PSU in the cheap mini PC? With cords coming out of the case? Seems like a recipe for disaster. Or do you have an external PSU? That seems even worse.

But why bother. With just a bit more waiting we can have a Strix Point APU which will be more than enough for 1080p or 1440p gaming.
have you seen the power requirements of the recent GPUs, just attach pic related and give it the full 230V. that's where we are heading to. if you can switch in on on demand and share it with another PCs without disassembling then that would be a win too.

Saving space in workplaces, attach them to the back of the monitor and it's basically an AIO but easier to repair/upgrade and can be replaced without having to replace it all as one unit.
i used one for home pc for my father. I Attached it behind the monitor and hid the cables + bluetooth keyboard and mouse and he can use his desk for hobbies more easly. I wanted to buy aio but this way i bought him a good large monitor and can change the pc any time.

Monitoring sensors, cameras and having a backup drive installed to mirror the main NAS.
I dont want to rely on my main high power draw system for those functions.
