Pretty advanced. They were the middlemen of Eurasian commerce. Persia was always the clearinghouse for goods traveling from India, China, Southeast Asia, the Roman/Byzantine Empires, etc. since they were at the crossroads. There were numerous Chinese embassies exchanged with Sassanian ones to ensure peaceful trade and travel between the respective empires.
The Sassanians wouldn't have been able to fight the Rome/Byzantium as well as India and the Turkic peoples if they didn't have the tax base of their agriculture as well as vast trade links to develop an army of Aswaran heavy cavalry, mounted archers, Dailamite infantry, and other formidable opponents to the Romans/Byzantines.
What was their agriculture?
Barley or wheat?

Barley, rye and millet. Wheat was something only for the higher classes and Iran is pretty arid except for the part that borders the Caspian Sea. Rice and tropical fruits were grown in the wetter places.

Textiles. The Persians in general grew some flax and cotton but mostly imported fibers to produce widely-admired textiles. They would take raw silk and cotton to weave into gorgeous tapestries, clothing, etc. Also carpets and rugs were a huge thing hence why Persian carpets are always considered top-notch.
They also excelled in metalwork. Sassanian weapons, armor, tools, and cooking utensils were widely exported. They were also great craftsmen with israeliteels.
Silk was unbelievably expensive back then.

It's the only English book that examines Sassanid Empire in depth. The rest mostly care about their military conflicts with Rome.

They held that territory for years, people legit thought the Romans were going to be conquered for good.

They didn't hold much of any of Anatolia. It was essentially a campaign trail by Shahin and later followed up in the same path by Kardarigan and Shahrbaraz. That is not 'control' in any sense. Asia Minor was not garrisoned or controlled like Syria or Egypt was in any manner.

Agrarian largely like the Romans and later Eastern Romans/Byzantines; they also had an extensive trade and manfuctaring of "Persian" glass silverware and other gems and what not that was EXTREMELY profitable all over the world at the time, even getting as far as Japan which was the boondocks of Asia in the 400s-700s. And textiles too.
