Pretty sure there's some study that says taking notes isn't really effective for learning or recall, so yeah just notepad or whatever before I can transfer the info into a better format.
I tried Obsidian for a bit and it seemed cool but I felt I was spending way too long writing and formatting to basically reinvent wikipedia. The mindmap was interesting but I feel like your brain should be doing that automatically by just thinking about stuff a lot.
I have just started writing index for my notes on the first page in xournal++. Not sure why I haven't sooner, but shit dude, I can actually find my notes??
Pen+paper in class, while commuting copy to google docs and export to pdf with links, latex formulas n shiiet. No markdown/vim/emacs cringe.
I would say the best solution overall for students is an ipad/tablet but I prefer to carry as little stuff as possible.
Mind that LULZ doesn't take notes because you either have to be employed or in college to do that.
Different people have different learning techniques and while most learning is done through practice (you try to solve the equation, you try to write the program yourself) notes are good because it's something you did. I treat my notes like books and format them accordingly, this way if I ever had to lookup something I didn't use in a long time I just pull out my notes and don't have to search through garbage on the internet.

I use a Samsung tablet. It's one of the new ones but I forgot the name. I like handwriting notes but notebooks get overwhelming. Highly recommend if you're like me

google keep - horrible but still usable, like stack of post-it notes
standard notes - very basic with no shekels but still very good if you want plain text notepad which is very secure. I use it for passwords, cards info, personal stuff
synology notes - not bad but I don't trust self hosting and myself, feels kinda dated but not in a bad way

one note - kinda good, not really streamlined, issues with syncing if you have cracked windows so I don't really trust it. Turning off kms telemetry gets rid of account error but who knows for how long.

Mostly I just use text files on my desktop, but for more long term organized stuff I use Obsidian(with no internet connection).
