They are very talented in playing, but not im writing. Chad's voice is a whole different level of awesomeness, but i could not bear to listen to a whole album from them.
Their production is in fact minimal because they add no additional melodies or harmonies to most of their recordings. It's literally just play monotonous drum pattern, play soulless open chords and predictable bass accompaniment, then add chads whiny voice and there's 90% of their catalogue.

Most rock music is the pop formula. Standard pop songwriting is the same as standard rock songwriting, only you add in a guitar solo for some shit. There are a lot of ways you can express yourself and your individuality in that format and not sound like a copy of another band. The most unique Nickelback ever seems to sound is sounding like some hybrid of Pantera and Nirvana, and that's just....barfy.
