Why do people want rolling-release distros and bleeding-edge package versions? I don't fricking get it, please explain. I'm still running Debian oldstable (buster), not because it's hard to upgrade but because I just haven't felt the need.

that's the thing. i do want stability from my computer because after i come back from work all i want from my computer is to behave and be my entertainment and debian provides that. the updooter culture is strongly embedded into people mindset after windows 10 and its forced updates. so you have 2 types of people now. those who are too scared of updating like you and me because after bitter win10 experience you just think everything gonna break, and second type who do update constantly because society and win10 told them to for their muh security reasons

You can do that with newer versions of a distro too. Why do we have to justify your autistic fricking behavior? The big reason to stay reasonable current is to get security updates. If you don't have to follow any compliance regimes, then obviously that doesn't apply to you.
It helps if you have a recent kernel so you have WiFi to download the source
use any of the universal packaging formats if it's general app. if you need newer drivers/kerbel backport them

Tor is always updated on Debian. As for ext4 crypt there may be a way around it.

Most people that have been using linux for a long time generally do settle on stable distros, anon. Arch is just an easy way for newbies to feel more knowledgeable about their "minimal system", it's biggest perk is honestly that it forces you to install manually from the CLI without being as in-depth as gentoo is.

I don't care about software versions tbh. But I do care about the Linux Kernel version. Each days, new bugs are fixed, new functionalities are implemented, better power efficiency, better drivers etc...

Linux drivers are part of the kernel, if you want to use the latest video drivers (amd-gpu for example) you have to use the latest kernel, if you want that new controller to work out of the box you need to use the latest kernel, if you want your ryzen cpu to idle at 400MHz instead of 2Ghz, you have to use the latest kernel.
