cool idea.
the downsides are that the phone is not easily upgradable and repairable, and in most cases it won't turn on if it has a dead battery, even if it's plugged to a charger.
and it's limited to proprietary 'apps' to do anyhting unless you install a linux distribution on it, at which point it would be more convenient to use a small sbc instead, unless you have specific use cases that needs the phones hardware.

There aren't many, but you have few models which have WWAN card, there are few thinkpads models with it
If you really want to, m.2 wwan cards can go into any pc with a free pcie slot.

It's really not much more convenient than just syncing your documents with a cloud service or to your local network with syncthing or just homegroup. Novelty aside it's bad value when you consider servicing, device lifespan, upgradeability. The only people who use docks don't actually no anything about hw or do any serious work.
