Most sacrifices were slaves, or along the same lines, people without personal sovereignty (prisoners, convicts, children/youths). They also certainly wouldn't conflate the ceremonial, spiritual institution of sacrifice with just outright killing yourself. They'd probably consider a cowardly waste of life, if not blood. Sacrifice is all about losing something you'd rather keep.
uh, those who went to sacrifice by their own will were considered "heroes" and people would tell them their "sins" and thoughts so they could be told to the gods, they also got a "do anything you want" day before their death

Basically every pre-Christian civilization viewed suicide as an honorable was to respond to an inescapable defeat, at least among the upper classes.
There is a big difference between sacrificing yourself for honor vs promoting that suicide is acceptable via antinatalist style.
Even the west had the same sort of honor suicide. "The Captain goes down with the ship" is an easy example.

Why did suicide become acceptable in the past 50 years, but not in the 1400 years of Islamic history? It doesn't make sense.

It's still not acceptable they just do gymnastics and not consider it suicide. Martyrdom is acceptable and encouraged in islam since the first days so nothing has changed really. They just didn't have bombs and the need to wage asymmetric warfare before.

I don't think any culture glorified it outside of battle. It has probably only grown more accepted with time, and it is still a huge taboo even now
There is no one single reason why, but, historically speaking, many cultures have seen suicide as an acceptable way to escape the trials and tribulations of the world.
For example, it is said that in the middle ages (around AD 300) Celtic warriors, on return from a battle, would take poison and end their own lives so as not to fall into enemy hands. The Spartans, ancient Greek warriors, would also kill themselves when they encountered defeat. And of course, the Aztecs, a tribe of Native Americans, would immolate themselves to the god Huitzilopochtli to gain entry into heaven.
