The taliban never defeated NATO militarily. In fact, when we invaded Afghanistan in 2003 it only took us a couple of weeks to capture the entire country, including Kabul.
The taliban then spent the next 20 years hiding in the mountains carrying out occasional ambushes and suicide bombings. In the meantime, we realised we can't stay there forever so we done our best to train the moronic simpletons of Afghanistan to defend themselves. A near impossible task because they have some kind of collective retardation.
Eventually we withdrew from active operations in Afghanistan and left the Afghan army to defend the country.
At this point the Taliban began retaking ground, and eventually after a few years they took back the country.
